Hello folks!
Well this is a first, I have been asked by at least 5 different people for my stuffed pepper recipe. So here goes;
3 to 4 medium to large bell peppers
1 lb hamburger, your choice lean or not. or 1/2 lb hamburger + 1/2 lb ground sausage.
1 small to medium onion chopped fine.
1/2 to 1 tsp salt (to your own taste)
1/4 to 1/2 tsp pepper.
1/2 to 1 tsp garlic powder
1 to 1 1/2 tsp Italian seasoning
1 egg
1 large can of tomato juice.
Prepare peppers by removing the stem and cleaning out the seeds.
mix hamburger and sausage together thoroughly
add chopped onion, salt, pepper, garlic powder, Italian seasoning, and egg, mix
it all together.
Stuff each of the peppers with as much meat as they will hold. and place in a large pot. Make 1 1/2 to 2 inch meatballs with remaining meat and place in pot.
Pour entire can of tomato juice onto peppers.
Cover pot bring to a boil, then lower heat and let cook for 45 min. to 1 hour.
I usually serve potatoes either boiled or mashed with the stuffed peppers.
Once the peppers are all gone I will make a spaghetti dinner together with a salad on another day.
You are of course welcome to modify the seasonings to your own taste. You can also add either rice or oatmeal if you need to extend your meat ration. Ground Turkey also works.
