Victor's Bread Pudding Recipe.

Hello folks,

First let me preface this recipe by saying, my wife Claudia gave it to me, who in turn got it from her mother, etc. As it turns out it is very similar to the bread pudding recipe from my own mother and grandmother. As you will notice from the ingredients, it is the type of recipe typical of people living on a farm where they have their own milk and egg producers. (You know, cows and chickens.)

Oh! and another thing, as a kid growing up eating home made bread the crust was often quite heavy and tough so it was cut off and saved up for making bread pudding or for using as breading for chicken or pork or casseroles.

At any rate here is the recipe:

6 cups of loosely packed bread crumbs, if bread is dried completely use 3 to 3 and 1/2 cups of bread crumbs.
3 cups warm milk-not hot.
3 to 4 eggs
3 tablespoons butter
1/3 cup sugar
2 teaspoons cinnamon
1/2 cup raisins, dried cranberries, blueberries,or none your choice.
1 teaspoon vanilla.

You should use a covered casserole dish to bake it in. If not your pudding will have a crisp crust on the top, again your choice. I use a covered dish.
Pour warm milk over bread crumbs and mix well.
Beat eggs in small bowl and add to milk and bread.
add rest of ingredients and stir up very well.

bake at 350 degrees for 45 min to 1 hour.

serve warm with or without milk, cream, or whipped cream.
Keep refrigerated, can be warmed in microwave.
